Veg kuruma – Cooker Style

Today’s dinner was cooker style veg kuruma with chapathi. Thanks to Srividya. I pinged her to check on some easy to make one pot dinner receipe as what to cook for dinner is becoming a big challenge every day. If dosa making every day makes it boring, the side dish for dosa is another challenge. Nobody wants the same side dish for two day in a row.

So, I was thinking anyways to make dosa for entire family consumes 30 minutes. Why not try one pot different dinner. That saves me some time and will be a treat to the family’s taste buds too. What are you saying? Taste buds will be treated only if I make it tasty? I am not able to hear you!!!

One of the recipe was cooker style veg kuruma. And she guided me to make non coconut version as I don’t use coconut for daily cooking. Sharing the recipe in the hope that Adi will read this some day when she needs to fix a quick meal and thanks her mother profoundly. Yeah I have that tholai nokku parvai (imagining ahead of future) you no?

Ingredients:
Onion – 1 medium
Tomato – 1 medium
Ginger/garlic paste – 1 tbsp
Mixed vegetables – as much as you want. I used potato and the frozen cut veggies pack that has carrots, beans, corn and green peas. The same can be made with cabbage/carrot combo too.
Coriander leaves (optional)

To grind:
Poppy seeds – 1 tbsp
Roasted bengal gram dal – 2 tbsp
Green chillies – 4 numbers

To temper:
Bay leaves, cinnamon sticks, fennel seeds, cloves

Method:
1. Heat 2 tbsp of cooking oil in a pressure cooker.
2. Add all items in To temper list, fry for few minutes
3. Add onion, ginger garlic paste, tomato, vegetables in same order one after the other with few minutes gap so that they get half cooked and mix well.
4. Add salt, turmeric powder and pressure cook this for 15 mins.
5. In the meantime, grind the items in To grind list with little water and keep it ready.
6. Once pressure is realeased off cooker, open the cooker, mix the gravy well and add the ground mixture.
7. Allow it to cook/boil for 5 minutes. Add some water if kuruma gets too thick. It is always better to add hot water to cooking pot rather than cold water. So, I usually microwave the water for 1 or 2 minutes before adding to pot.
8. Add coriander leaves at the end if you like it.

Vegetable kuruma ready in less than 30 minutes to serve with chapathi/roti.

Please share with me if you are aware of more one pot quick meal ideas for dinner. I prefer to avoid rice though.

P.S: A big thanks to all of you. I managed to explore WP app today and added most of the blogs I read to follow list. It took a while to explore it. Dumb me!!! I am yet to read from it. Will do it from tomorrow. Its almost 11pm and too sleepy to even open one more browser tab now. Forget about searching for my phone in the messy house.

Unlike past marathon when I usually schedule my day post for 1am that too have it scheduled for few days in a row, this time I am drafting the post fresh past 10pm. I had no clue as what to post until 7:30pm today. Had it been previous years, I would have got panic attack if the post is not ready for next day. Is this what they call as big change? I see that I have started to take things light and this is a proof for it. Hope it is a good change.
